To prepare a delicious meat and vegetable dish, we start by preparing our ingredients. Make sure you have pork or beef, onion, garlic, Kapia peppers, zucchini, mushrooms, bay leaves, thyme, paprika, white wine, salt, pepper, chili pepper, and fresh parsley on hand. These ingredients will add extra flavor to our dish.

The first step is to cut the meat into suitable pieces that will cook evenly. Heat a deep frying pan and add a generous amount of oil. When the oil is well heated, add the pieces of meat and fry them until golden brown on all sides. This process will seal in the juices of the meat, giving it a juicy texture. Once the meat is fried, remove it from the pan and set it aside to continue with the vegetables.

In the same pan, keep the flavored oil from the meat and add the finely chopped onion. Sautéing the onion will release its sweetness, and the aroma will fill the entire kitchen. After a few minutes, when the onion becomes translucent, add the sliced garlic and the Kapia peppers cut into strips. The sweet taste of the peppers will perfectly complement our dish.

Add the bay leaves, 1/2 teaspoon of thyme, and 1/2 teaspoon of sweet paprika, stirring constantly to blend the flavors. Deglazing the ingredients with 250 ml of white wine will add a refined taste, and the alcohol vapors will evaporate, leaving behind an intense aroma. Once the wine starts to boil, you can bring the meat back into the pan. Cover everything with water so that the meat is completely submerged, and season with salt and pepper to taste. Also add the sliced chili pepper to incorporate a spicy note.

Let the dish simmer covered on low heat, so that the meat becomes tender. It is important to check from time to time to make sure it doesn't run out of liquid; if you notice that the water is reducing too much, add a little hot water. When the meat is well cooked, add the sliced mushrooms and the chopped zucchini, letting everything simmer on low heat, uncovered, until the vegetables are cooked but still hold their shape.

Finally, sprinkle chopped fresh parsley on top and let everything come to a final boil. This dish is usually served alongside new potatoes, boiled potatoes, or a delicious mashed potato, which will perfectly complement the rich taste of the meat and vegetables. Enjoy your meal!
