To begin, we will prepare the leek, the main ingredient of this delicious recipe. The leek is a flavorful vegetable that adds a unique taste to our dishes. It is washed well under a stream of cold water to remove impurities and dirt. Once clean, we cut the leek into pieces of about 10 cm, being careful to keep the white part, as this is the best for stuffing. Using a finger or a teaspoon, we carefully remove the core, forming perfectly cylindrical tubes that will be filled with a savory mixture.

In a pot, we add a tablespoon of olive oil and sauté two finely chopped onions over medium heat. The onion will sauté until it becomes golden and transparent, at which point we add the rice. It is recommended to use long-grain rice, which will absorb the flavors and remain fluffy. We pour in a cup of water and let it simmer over low heat, stirring occasionally. When the rice is almost cooked, we add chopped dill or parsley, according to preference, and season with salt, pepper, and sweet paprika for a touch of color and flavor. Finally, we incorporate two teaspoons of tomato paste, which will give a special taste to the filling.

We let the rice mixture cool slightly, then mix it with the minced meat, choosing either pork, beef, or a combination, depending on personal preferences. If necessary, we adjust the seasoning to taste. Using a teaspoon, we fill the leek tubes with the prepared mixture, being careful not to overfill them to allow the rice to expand during cooking.

After filling all the leek tubes, we place them in a clay pot, which will help retain heat and moisture. We pour tomato juice or white wine over them, which will add a rich flavor to the dish. We sprinkle the previously removed chopped core of the leek on top to add texture and extra flavor.

We cover the pot with a lid and place it in the preheated oven at 180 degrees Celsius, letting it bake for an hour over low heat. After this interval, we remove the lid and let the dish brown for 5-10 minutes, until the juice has reduced and started to form a delicious crust on top.

It is served warm, alongside a steaming polenta and a generous spoonful of sour cream, which will perfectly complement the flavors. This dish is not only a delicacy but also a true celebration of taste! Enjoy your meal!
