I chopped the onion finely and sautéed it in a pan with a little heated oil over medium heat. The aroma of the fried onion began to fill the entire kitchen, and I added the ground meat mixture, allowing it to brown alongside the onion. At this moment, I decided to add the finely chopped garlic, which would release its delicious flavors into my mixture. I seasoned everything with salt, pepper, and a few herbs, such as oregano and basil, to enhance the flavor of the dish.

Meanwhile, I boiled the diced tomatoes in a small pot until they softened and were ready to be blended. After obtaining a smooth sauce, I seasoned it with salt and pepper, thus creating a delicious base for the final dish. The carrots, peeled and chopped, I boiled until they became soft, then mashed them, obtaining a creamy puree, which I set aside.

The beautiful, juicy yellow tomatoes I hollowed out with a spoon, preparing them for stuffing. I filled each tomato with the meat and onion mixture, and on top, I sprinkled a little grated cheese to melt nicely in the oven. I placed the stuffed tomatoes in a baking dish and put them in the oven, leaving them for about 15 minutes until the cheese turned golden and appetizing.

In the meantime, I sliced the eggplants thinly, about 1-1.5 mm thick. I brushed them with olive oil and browned them in the pan, achieving a crispy texture and a savory taste. These slices of eggplant will add a pleasant contrast and a touch of refinement to my dish.

To assemble the plate, I used two circles of different sizes, placing the carrot puree in the center and the tomato sauce around it. On top of the puree, I placed a slice of eggplant, and then carefully added a stuffed tomato. Finally, I sprinkled a little freshly chopped dill, not only to add a touch of color but also to provide a pleasant contrast of flavor. This dish is not only tasty but also a true visual feast, perfect for impressing guests.
