Kohlrabi are versatile vegetables, full of flavor and nutrients, that can be transformed into a culinary delight when stuffed with a delicious combination of meat and rice. We start by carefully peeling the kohlrabi, removing the outer skin with a sharp knife. Once peeled, we carefully hollow them out, taking care not to puncture them, to maintain their shape. This step is crucial, as the kohlrabi must be sturdy enough to hold the filling but thin enough to allow the flavors to penetrate.

For the filling, we take a fresh onion, which we chop into small cubes, so it can sauté evenly and integrate perfectly into the mixture. We mix the onion with the rice, minced meat - preferably pork or beef, depending on preferences - and add spices to taste: salt, pepper, maybe even a pinch of sweet or hot paprika if we like a hint of spice. It is important to mix the mixture well, so that each bite contains all the flavors.

After we have obtained the filling, we carefully stuff the kohlrabi, being careful not to overfill them. We place them in a deep pot, ideal for boiling, and between the kohlrabi, we add the hollowed-out pieces, which will contribute to a delicious sauce. We pour enough water into the pot to cover the kohlrabi halfway, so they can cook evenly. We cover the pot with a lid and let it simmer on low heat, during which time the flavors will intensify, and the kohlrabi will soften.

During the boiling process, we take care of the sauce. Once the kohlrabi are cooked, we remove the small pieces of kohlrabi left and blend them with a blender, adding a little water from the boiling pot to achieve a creamy texture. It is important to set aside some pieces to add at the end and give the sauce a pleasant consistency. Over the obtained sauce, we add freshly chopped parsley and sour cream, which will give it a touch of finesse and a refreshing taste.

In the end, we serve the stuffed kohlrabi hot, with the generous sauce poured over them. This dish not only looks wonderful but also offers an explosion of flavors that will delight the taste buds. It is a perfect recipe for a family meal or to impress guests, while also having a healthy and nourishing aspect. Enjoy every bite!
