We put the chicken thighs (but it can also be done with other chicken parts, with a whole chicken cut into pieces, or with wings) washed very well and dried with a towel in the heated pan, in which we have already added the oil. The pan should be hot enough to achieve an even and appetizing browning. We leave it on medium to high heat so that the chicken pieces brown well and the aroma develops. After about 5 minutes, when the chicken is already browned on one side, we carefully turn it several times to ensure it cooks evenly on all sides. We add salt, vinegar, and let it evaporate for 1-2 minutes so that the flavor concentrates in the meat.

After achieving a nice browning, we add dried marjoram, which will give the dish a special fragrance, and sliced lemon, which will add a note of freshness. We continue cooking on medium heat, being careful to stir occasionally to prevent sticking. About 5 minutes before it’s ready, we add honey to each piece of chicken. The honey will caramelize and provide a glazed effect and a sweet-sour flavor that will turn the dish into a culinary delight. We also add a bunch of freshly chopped green parsley, which will bring a color contrast and an extra freshness.

Before finishing the chicken dish, we take care of the side dish. We peel the potatoes and cut them into very small cubes so that they cook evenly and quickly. We put the potatoes in a pot with water, just enough to cover them, and let them boil on high heat. When they are cooked, we drain them well and mash them with a masher or a fork. We add butter, sour cream, or very rich milk, depending on preferences, and salt to taste. We mix well with a spoon or a hand mixer to obtain a very creamy and smooth puree. This puree will perfectly complement the glazed chicken, creating a delicious and comforting meal. Enjoy your meal!
