Rabbit in a Pan
The rabbit is a highly valued ingredient in traditional cuisine, and this simple and flavorful recipe will turn your meal into an unforgettable experience. We start by preparing the rabbit. It is cut into suitable pieces, which are then left in a bowl of cold water to clean off any impurities. This step is essential for achieving more tender and tastier meat.
Meanwhile, we take care of the vegetables. The onion and garlic are carefully peeled, then washed well under a stream of cold water. The onion is finely chopped, and the garlic can be crushed or finely chopped, depending on preference. In a deep pan, we heat the olive oil over medium heat. When it starts to sizzle, we add the chopped onion and garlic. We let the vegetables sauté for about 5 minutes until they become translucent and release their aromas.
Once the onion and garlic are ready, we thoroughly dry the rabbit pieces with a paper towel to remove excess water. They are added to the pan over the vegetables and are fried on each side until they turn golden, a sign that the juices are sealing inside. Then, we deglaze the meat with a glass of white wine, allowing it to evaporate, which will give the dish a special flavor.

We season with salt, pepper, rosemary, bay leaves, chili pepper, and a teaspoon of sugar, which will balance the acidity of the tomatoes.
We let everything simmer on low heat, stirring occasionally to prevent sticking. It is important to check the consistency of the meat; if the broth reduces but the meat is not tender enough, we can add more broth. Finally, the rabbit is ready when the meat becomes soft, and the sauce has significantly reduced, creating a delicious glaze.
After cooking, we let the dish cool slightly, then serve it with creamy mashed potatoes, which will perfectly complement the intense flavors of the rabbit. This recipe is not just a simple dish, but an invitation to savor authentic tastes. Enjoy your meal!
