To create a delicious and comforting dish, we start by cleaning the pumpkin, removing the skin and seeds, then cutting it into evenly sized cubes. This will ensure even cooking. In a large skillet, we put a cube of butter to melt, and when it has heated up, we add the pumpkin cubes. We sauté them over medium heat, stirring occasionally, until they become slightly golden and start to release their aroma.

At this point, we add the potatoes, which we peel and cut into similar-sized cubes as the pumpkin. These vegetables will combine perfectly, and the sweet flavor of the pumpkin will complement the creamy texture of the potatoes. We season the mixture with salt, pepper, and, if we like, we can also add a little nutmeg for extra flavor.

After mixing well, we pour 200 ml of water over the vegetables and cover the skillet, letting everything simmer on low heat. We will notice how the water evaporates slowly, and the vegetables will release their juices, creating a delicious sauce. It is important to check the consistency from time to time, stirring gently to prevent sticking.

Meanwhile, we move on to preparing the onion and peppers. We peel the onion and chop it finely, and we remove the seeds from the peppers and cut them into small cubes. In another skillet, we heat a little olive oil and add the onion and peppers, sautéing them until they become soft and translucent. This will create a perfect aromatic base for adding the meat.

Once the vegetables are sautéed, we add the meat cut into cubes, whether it is chicken, pork, or beef. We mix well, then pour in 250 ml of water or chicken broth to enhance the flavors. We season again, to taste, with salt, pepper, and optionally, with herbs like thyme or rosemary. We let the mixture simmer on low heat, covered, until the meat becomes tender and blends harmoniously with the vegetables.

When all the ingredients are cooked and the flavors have blended perfectly, it is time to serve. We carefully place the mixture of pumpkin, potatoes, meat, and vegetables on a plate. We garnish with a few fresh parsley leaves for a vibrant look. This recipe is not only nutritious but also full of flavor, perfect for a family meal or with friends. We serve with confidence and joy, knowing that each portion will bring smiles to the faces of our loved ones. Bon appétit!
