This delicious recipe for pork stew with vegetables and stuffed potatoes is an excellent choice for a comforting dinner. We start preparing the dish by ensuring we have all the ingredients at hand. You will need about 500 grams of pork, 2 onions, 1 red bell pepper, 1 large carrot, 200 grams of mushrooms, 4-5 cloves of garlic, 2-3 cherry tomatoes, 2-3 tablespoons of tomato or pepper paste, 1 bunch of fresh parsley, 4 large potatoes, salt and pepper to taste, as well as oil for sautéing.

The first step is to heat a little oil in a deep pan or pot. Add the finely chopped onion and bell pepper and sauté them for about 5 minutes until they become translucent and release their aroma. Then, add the diced pork and grated carrot. Continue sautéing the mixture for 10 minutes, stirring frequently, so that the meat browns evenly and absorbs the flavors of the vegetables.

After the meat has started to change color, transfer all the contents to a taller clay pot. Add the sliced mushrooms, half of the finely chopped garlic, and then the sautéed meat mixture. On top, sprinkle the remaining garlic and add the tomato or red pepper paste, which will give the dish a rich flavor and vibrant color. Also, add half of the fresh parsley leaves, and then place the halved cherry tomatoes on top.

Cover the pot with a lid and put it in the preheated oven at 180 degrees Celsius for 30 minutes. After this time, remove the lid and leave the stew in the oven for another 30 minutes or until the meat is tender and the sauce has reduced considerably. In the meantime, you can prepare the potatoes. Peel them, cut them in half, and carefully scoop out the insides, so that you have two halves that will serve as small bowls for the stew.

Once the stew is ready, take the pot out of the oven and the dish will emit irresistible aromas. Fill the potato halves with this tasty stew and sprinkle the remaining chopped fresh parsley on top for an extra touch of freshness.
