To prepare a delicious recipe of rice with mushrooms and vegetables, we will start by gathering all the necessary ingredients. You will need 300g of rice, 1 medium onion, 1 red bell pepper, 300g of fresh mushrooms, 1300ml of water, 20g of butter, 100ml of white wine, a few green parsley and celery leaves, salt and pepper to taste. Now that we have everything we need, let's get cooking.

The first step is to put the butter in a large pan over medium heat and let it melt completely. Once the butter is melted, add the finely chopped onion. Stir occasionally so that the onion sautés evenly and becomes translucent. This step will add a wonderful flavor to our dish. After about 5 minutes, when the onion is well sautéed, add the rice. Make sure to mix well so that the rice absorbs the flavors of the onion and butter. Let the rice sauté together with the onion for 2-3 minutes, stirring constantly.

The next step is to deglaze everything with the white wine. Let the mixture simmer until the wine has almost completely reduced. Meanwhile, bring the 1300ml of water to a boil. Once the water has reached boiling point, start pouring 200ml of water over the rice, allowing it to absorb the liquid before adding more. Continue this process until the rice is cooked and creamy, which will take about 15-20 minutes. Finally, season with salt and pepper to taste.

On another burner, put a separate pan with 20g of butter to melt. Add the finely chopped bell pepper and let it sauté for 2 minutes. After that, add the thinly sliced mushrooms. Mix everything well and add the 200ml of water so that the mushrooms cook evenly. When the water has almost evaporated, add the chopped green parsley and celery leaves, and then season with salt and pepper.

After the mushrooms are cooked and the water has reduced, add them over the cooked rice. Let everything simmer together for a maximum of 10 minutes, stirring occasionally. Finally, turn off the heat and add a few tablespoons of cheese, stirring gently to achieve a creamy texture.

Here it is, the dish is ready! Serve it warm, garnished with a little fresh parsley on top. Enjoy your delicious meal!
