To prepare a delicious lamb dish, start by placing the meat in a heated pot with a little oil. Allow the meat to brown on all sides; this process will add a deep, savory flavor. Once browned, add salt, pepper, and half a cup of water, then cover the pot. Let the meat simmer on low heat, allowing the juices to penetrate the meat, making it more tender. Whisk the egg whites until frothy, then add the yolks, continuing to mix. Gradually add the lemon juice, being careful not to form lumps. Then, take a ladle of juice from the pot with meat and vegetables and slowly add it to the egg mixture, stirring constantly. This step is essential to prevent the egg from curdling when you add it to the pot.
Once you have obtained a homogeneous sauce, pour it into the pot over the lamb dish. Cover the pot again and let it sit for about 5 minutes, so the flavors can blend and the sauce thickens slightly.
