To prepare a delicious cheese mashed potato recipe, we start by peeling the potatoes. They should be washed very well under a stream of cold water to remove any impurities or dirt. Once clean, we cut them into evenly sized cubes to ensure even boiling. We place the potatoes in a large pot, add cold water and a teaspoon of salt, then put it on medium heat. We let it boil for about 20 minutes or until they become soft and can be easily pierced with a fork.

After boiling, we drain the potatoes and let them cool slightly. Then, we pass them through a potato ricer or a sieve, thus obtaining a fine and creamy puree. This step is essential to avoid lumps in the mixture. In a large bowl, we combine the previously obtained potato puree with flour, melted butter, grated cheese, and eggs. We mix all the ingredients well with a spatula until we obtain a homogeneous mixture. It is important to taste the mixture and add salt to preference, being careful not to overdo it, as the cheese may already be salty.

We prepare a large baking tray, which we line with baking paper to prevent the mixture from sticking. Using a piping bag or a plastic bag with a cut corner, we form different shapes of the mixture on the tray. We can create small balls, spirals, or even flower shapes, depending on our creativity. It is a pleasant activity that can also involve children, bringing extra fun to the kitchen.

Once we have finished shaping all the portions, we preheat the oven to 180 degrees Celsius. We place the tray in the preheated oven and let it bake for about 15-20 minutes, or until the shapes become golden and slightly browned on the surface. The aroma that will spread throughout the house will be irresistible. Once ready, we take the tray out of the oven and let it cool slightly before serving.
