To prepare this Chinese rice, we start by gathering the ingredients. You will need 200 grams of basmati or jasmine rice, which cooks perfectly and retains its flavor. Also, make sure you have 300 grams of chicken breast, cut into cubes, a cup of fresh vegetables (carrots, bell peppers, peas, and broccoli are excellent choices), two eggs, green onion, and garlic for extra flavor, as well as soy sauce, sesame oil, and salt to taste.

The first step is to prepare the rice. Rinse the rice under cold water until the water runs clear, then boil it according to the package instructions. It is important not to overcook it, as it will be cooked further in the wok.

In a heated wok, add a tablespoon of sesame oil. Add the chicken cubes and fry them over high heat until golden and cooked evenly. Then, remove the chicken onto a plate and add the chopped green onion and minced garlic to the wok. Sauté them for a few seconds until fragrant.

After that, add the chopped vegetables, starting with those that take longer to cook, such as carrots and broccoli. Stir constantly so that the vegetables remain crunchy and colorful. After about 3-4 minutes, when the vegetables are nearly done, reintroduce the chicken into the wok.

Beat the two eggs in a bowl and pour them into the wok, stirring quickly to distribute them evenly. When the eggs are cooked, add the drained boiled rice and the soy sauce. Mix everything well to combine the flavors and ensure that the rice absorbs all the delicious juices from the wok.

It cooks for another minute with the pepper, and then the rice is added for another minute. After turning off the heat, chopped fresh parsley (1/2 bunch) is added. The vegetables should not be perfectly fried; they remain slightly crunchy. Chinese rice with chicken and vegetables is served hot.
