Chicken thighs with baked potatoes
Wash the chicken thighs under a stream of cold water, removing any impurities. After washing, cut the thighs in half at the joint, so you get upper and lower parts. This cutting method allows the thighs to cook evenly and absorb the flavors of the dish.
Meanwhile, peel the potatoes, making sure to remove any damaged areas. After peeling, cut them into cubes of about 2-3 cm, to allow for even cooking. The diced potatoes will add a delicious texture to the dish and will absorb the aromatic juices of the meat.
Preheat the oven to 200 degrees Celsius, to ensure everything will be perfectly cooked. In a baking tray (I use the oven tray, but you can also use a deeper tray if you prefer), add enough olive oil or sunflower oil to evenly cover the bottom of the tray. The oil will not only prevent the food from sticking to the tray but will also help achieve a crispy crust on the thighs.
Once the oil is prepared, arrange the chicken thighs in the tray, being careful not to overlap them, so they brown evenly. Between the thighs, add the potato cubes, distributing them as evenly as possible. They will absorb the meat's flavor and become extremely tasty.
Sprinkle salt, pepper, and your favorite spices over the meat and potatoes, such as paprika, granulated garlic, or herbs de Provence, to enhance the flavors. You can also add some slices of onion or whole garlic cloves for an explosion of taste. Gently mix everything in the tray so that the oil and spices distribute well.
Place the tray in the preheated oven and let the dish bake for about 45-60 minutes, or until the meat is tender and golden, and the potatoes are well cooked. Halfway through the cooking time, you can turn the thighs and potatoes for even browning.
When everything is ready, take the tray out of the oven and let the dish rest for a few minutes before serving. This resting time will allow the juices to redistribute, so each bite is full of flavor.
