To prepare a delicious chicken jelly, we start by choosing a quality hen, which will add flavor and texture to our dish. We portion the hen into suitable pieces so that it cooks evenly. In a large pot, we add cold water along with our preferred vegetables: carrots, onion, celery, and bell pepper, which will contribute to the soup's aroma. We season with salt and pepper, and then introduce the pieces of hen.

We let it boil over medium heat, stirring occasionally to ensure nothing sticks to the bottom of the pot. After about 1 hour, when the meat becomes tender and easily separates from the bone, we take it out of the water and let it cool slightly. At this stage, it is important to take care of the chicken broth. This will become the base of our dish. We strain the broth to remove the vegetables and any impurities, obtaining a clear and fragrant liquid.

In a small bowl, we dissolve the gelatin in a little warm broth, stirring vigorously to avoid lumps. Once the gelatin is completely dissolved, we gradually add it to the chicken broth, stirring continuously. This combination will provide consistency and an appealing look to the final dish.

The chicken meat, now cooled, is carefully shredded into strips or cubes, depending on personal preference. We place the meat in small bowls, ensuring that each portion contains a generous amount. Over the meat, we carefully pour the fragrant broth, so that it well covers all the ingredients.

After completing this step, we cover the bowls with plastic wrap and refrigerate them for a few hours, ideally overnight. This cooling time will allow the gelatin to set, resulting in a perfect texture. When we are ready to serve, we take the bowls out of the refrigerator, we can decorate them with fresh herbs, such as parsley or dill, and we serve them proudly, knowing that our dish will be appreciated by all who taste it. It is a recipe that combines simplicity with refinement, bringing a touch of tradition to every meal.
