Beef Stroganoff in a Nest of Rice
To prepare a savory and aromatic dish, we will start by washing the rice in several waters, ensuring that we remove impurities and excess starch. Once we have completed this step, we put the rice to boil in a pot with water, adding a splash of oil to prevent the grains from sticking. In the meantime, we can add a few peppercorns, some tarragon, thyme, and, to taste, a pinch of seasoning to enrich the rice's flavor. When the rice grain starts to bloom, we will remove the pot from the heat, covering it with a tight lid. Then, to finish cooking, we place the rice in the oven for about 15 minutes, which will allow the steam to complete the cooking process.
Meanwhile, we take care of the meat. We cut it into thin strips, sprinkle them with ground pepper and a pinch of seasoning, and then coat them in flour, ensuring that each piece is well covered. In a hot pan, we fry the meat for 2-3 minutes until it is nicely browned. Then, we add the julienned onion, which will contribute a special sweetness to the dish. We season to taste with our preferred spices and add enough water to cover the ingredients. We let it simmer for 20-25 minutes, stirring occasionally.
Once the meat is almost cooked, we add the drained mushrooms, crushed garlic, and, if desired, a splash of white wine to enhance the flavors. We simmer everything for about 15 minutes, making sure to add additional water if necessary, to ensure the meat becomes tender and well-cooked. Once the meat is ready, we mix the mustard with the sour cream and add the mixture over the meat. We let it simmer together for another 5 minutes, then add the sliced cucumbers and tomato broth. After 10 minutes, the dish is ready to serve!
To present this dish attractively, we arrange the rice on plates in a nest shape. Using a spoon, we make an indentation in the center of each nest and fill it with the meat stroganoff. Finally, we sprinkle finely chopped parsley over the rice, giving it a fresh and vibrant appearance.
