It's a meal that will not only delight your taste buds but also bring a splash of color to your table. Plus, it's a simple recipe, ideal for a family dinner or a special occasion.

Preparation time: 30 minutes
Baking time: 45 minutes
Total time: 1 hour and 15 minutes
Servings: 4

Ingredients:
- 500 g ground beef
- 1 large onion
- 4-5 cloves of garlic
- 1 large eggplant, sliced
- 1 zucchini, sliced
- 3 potatoes, sliced
- 1 green bell pepper
- 1 red bell pepper
- 2 large ripe tomatoes (for sauce)
- 2 firmer tomatoes (for slicing)
- 2 tablespoons tomato paste
- 1 bunch of fresh parsley
- Olive oil
- Salt, pepper, thyme, basil

Preparation:
1. Start by preparing all the ingredients. Wash and slice the vegetables evenly to ensure even cooking. Chop the onion finely and mash the garlic cloves.

2. In a large skillet, add 2-3 tablespoons of olive oil and sauté the onion over medium heat until it becomes translucent, about 5-7 minutes. This will add a rich and sweet flavor to your dish.

3. Add the ground beef and let it brown, stirring frequently. Cook for 15-20 minutes until the meat is well cooked.

4. The next step is to add the garlic and the peeled, chopped tomatoes. Season with salt, pepper, thyme, and basil. Let the mixture simmer on low heat for 10 minutes for the flavors to combine.

5. Meanwhile, in another skillet, fry the slices of potatoes, zucchini, and eggplant with a little salt. This will enhance the flavor of the vegetables. If you have time, grill the eggplant and zucchini for an even more intense taste.

6. Preheat the oven to 180°C. In a large baking dish, pour a splash of olive oil on the bottom. Assemble the vegetables: start with a slice of eggplant, followed by zucchini, tomato, potato, and bell pepper. Continue layering the vegetables in a circular pattern or in layers, depending on your preference.

7. Once you have finished assembling the vegetables, add the beef mixture in the center of the dish. Pour the diluted tomato paste with a little water and the mashed garlic over the vegetables.

8. Place the dish in the oven and bake for 35-45 minutes until the vegetables are golden and tender.

9. When ready, remove the dish from the oven and let it cool for a few minutes. Sprinkle chopped fresh parsley on top for a fresh look and wonderful aroma.

Serving:
The beef ratatouille is served hot, alongside a green salad or a slice of fresh bread. This recipe is perfect to be enjoyed with a glass of red wine.

Personal suggestion:
To add a burst of flavor, you can experiment with different herbs, such as oregano or rosemary, according to your taste. You can also add grated cheese on top in the last minutes of baking for a crispy and tasty layer.

This beef ratatouille recipe is not only a delicious dish but also an opportunity to explore varied flavors and textures. It will surely become a favorite in your kitchen!
