Summer Cake with Fresh Fruit and Cream Cheese

On hot summer days, when the sun shines brightly and the heat urges us to relax, nothing compares to a refreshing and delicious no-bake dessert. I invite you to discover the recipe for a summer cake, a sweet treat I’ve made with great love several times this season, and I’m sure you’ll adore every slice.

A Brief History of the Summer Cake

No-bake cakes are an old tradition, cherished in many cultures, perfect for celebrating special moments during the warm months. They allow the use of seasonal fruits, bringing a splash of freshness and color to our tables. Whether it’s a gathering with friends or an anniversary, this cake will surely be the star of the evening.

Preparation Time

- Preparation time: 30 minutes
- Chilling time: 2 hours (or until set)
- Total time: 2 hours and 30 minutes
- Servings: 12

Ingredients

- 500 ml heavy cream
- 500 grams cottage cheese
- 2 lemons (juice and zest)
- 1 packet of gelatin
- 1 packet of tart gelatin
- 2-3 tablespoons of sugar (adjust to taste)
- 1/2 pack of butter (about 125 grams)
- 250-300 grams ladyfingers
- 1 kg fruit (choose from strawberries, cherries, blueberries, or other favorite fruits)

Necessary Utensils

- Springform pan
- Parchment paper
- Mixing bowls
- Mixer
- Spatula
- Steamer

Step-by-Step Instructions

1. Preparing the pan: Start by preparing the springform pan. Cut a piece of parchment paper to fit the bottom of the pan. This step will make it easier to remove the cake without damaging it.

2. Preparing the ladyfingers: Measure the height of the pan using a ladyfinger. Cut the ends of the ladyfinger that exceed the height of the pan. The remaining ladyfingers will be used to form the edge of the cake. Crush the cut ends and mix them with the melted butter. Use a fork or mixer to achieve a smooth mixture.

3. Creating the base: Spread the ladyfinger and butter mixture on the bottom of the pan, pressing down well to create an even base. Stand the remaining ladyfingers upright around the edge of the pan, forming a ring.

4. Chilling the base: Place the pan in the refrigerator to allow the base to set while you prepare the filling.

5. Hydrating the gelatin: In a small bowl, add the gelatin and cover it with 1/2 cup of cold water. Let it hydrate for 5-10 minutes.

6. Preparing the cream: In a large bowl, mix the cottage cheese with the lemon juice, lemon zest, and sugar. Use a mixer to obtain a creamy and smooth mixture.

7. Whipping the cream: In a separate bowl, whip the heavy cream until it becomes firm. This step is essential for achieving an airy texture in the cake.

8. Combining the ingredients: Gently heat the gelatin over steam until it becomes liquid, but do not boil. Add the gelatin to the cheese mixture, mixing well. Then, carefully fold in the whipped cream, making sure to retain the air in the mixture.

9. Adding the fruit: Fold half of the chosen fruits into the cheese mixture, stirring gently. This will add a delicious note and beautify the cake.

10. Assembling the cake: Pour the cheese mixture into the prepared pan over the ladyfinger base. Spread it evenly and smooth the surface with a spatula.

11. Preparing the tart gelatin: Follow the instructions on the tart gelatin packet, using the remaining fruits. Pour the prepared gelatin over the cake to set it and give it a glossy appearance.

12. Final chilling: Cover the cake with plastic wrap and leave it in the refrigerator for at least 2 hours, or until fully set.

Serving and Suggestions

Once the cake has chilled and set, you can carefully remove it from the pan. Cut it into generous slices and serve it with a dollop of extra whipped cream or alongside ice cream for a contrast of textures. This summer cake pairs perfectly with a refreshing lemonade or mint tea, adding an extra touch of freshness.

Delicious Variations

- Berries: Instead of strawberries or cherries, you can add raspberries, blackberries, or even kiwi for an exotic flavor.
- Adding nuts: A handful of crushed nuts added to the cheese mixture will provide an interesting texture and unique flavor.
- Dairy-free: For a vegan version, use cashew cheese or silken tofu and coconut cream.

Nutritional Information

This summer cake is not only delicious but also packed with nutrients. Fresh fruits are rich in vitamins, while cottage cheese provides essential proteins. Additionally, using gelatin eliminates the need for a cake layer, reducing the calorie count and making it a lighter choice for those mindful of their diet.

The cake is prepared in a mold with a removable ring. I place baking paper at the bottom of the tray even though I don't put it in the oven. We measure the height of the tray with a ladyfinger and cut off the part that exceeds; the other ladyfingers are cut according to this. We crush the small ends that result and mix them with the melted butter. This mixture is spread at the bottom of the tray, and we place the other ladyfingers upright around the edge of the tray and put the tray in the cold until we prepare the filling. We hydrate the gelatin in 1/2 glass of water. We mix the cheese with lemon juice and sugar. Separately, we whip the cream well. We add the gelatin over the cheese and then the whipped cream. In this mixture, we add half of the fruits, after which we put the mixture in the tray with ladyfingers. On top, we place the remaining fruits over which we pour the tart gelatin prepared according to the instructions on the packet. Everything goes very easily and quickly. Enjoy your meal! In the recipe I received, it didn't say, but I gently heated the gelatin on steam and only after that did I mix it with the cheese.
