Semolina pudding with milk and strawberries, cylinder shape

Dessert - Semolina pudding with milk and strawberries, cylinder shape by Antonela H. - Recipia

Semolina pudding with milk and strawberries in a cylinder shape is made by cooking the semolina in milk with vanilla until it thickens, then pouring it over strawberry halves pressed against the walls of the mold. It comes out as a thick mixture with the fruit visible on the edge, and it is made without an oven. I choose small, firm strawberries, because big ones release water into the semolina. Preparation: 20 minutes. Cooking: 11 minutes. Total time: 31 minutes. Servings: 4. About 380 kcal and 14 g protein per serving.

Ingredients

  • 1000 ml milk
  • 1 tablespoon vanilla extract
  • 130 g semolina
  • 6 strawberries
  • 3 tablespoons semolina
  • 50 g chocolate (broken into pieces)
  • 1 tablespoon icing sugar

Preparation

1. Bring 1000 ml milk to a boil with 1 tablespoon vanilla extract over medium heat until it starts to boil, about 5 minutes. 2. When the milk boils, add 130 g semolina, sprinkling it in like rain, and stir constantly. 3. Lower the heat to minimum and stir for 5 minutes, until you get a thick mixture that comes away from the bottom of the pan. 4. If the semolina does not look thick enough, add one more tablespoon of semolina and stir for 1 minute. 5. Wash 6 strawberries, dry them well with kitchen paper and cut them in half. 6. Place the strawberry halves against the walls of the cylinder mold. If you do not have a mold, make one from thicker cardboard. 7. Put 3 tablespoons of semolina in a disposable cup and pour it from there into the mold, until it covers the strawberries. 8. When the strawberries are covered, add semolina with a spoon up to near the top edge of the mold. Pour slowly, one bit at a time, otherwise the strawberries move off the wall. 9. Sprinkle 1 tablespoon icing sugar on top. 10. Decorate with strawberry slices and 50 g chocolate broken into pieces.

Notes

The semolina can stick to the bottom of the pan if you do not stir constantly. Very large strawberries can be cut into quarters if they do not fit on the walls of the mold. Add the chocolate last, on top of the dessert, so it stays in pieces and does not melt into the milk. I also served it with strawberry jam, and it goes very well with the vanilla. The dessert contains milk and gluten (from the semolina), so it is not for people who avoid milk or gluten. Kept covered in the fridge, it lasts up to 3 days.

Frequently asked questions

What if the semolina comes out lumpy?

Whisk the mixture and add 2 tablespoons cold milk, then put it back on low heat.

Can I use frozen strawberries?

Yes, but drain them well after thawing, otherwise their water softens the semolina.

What can I use instead of strawberries?

Fresh raspberries work in the same quantity, but they are softer and break more easily when cut.
