Step by Step – Preparation Guide
1. Preparing the layers
- Almond layer: In a large bowl, beat the egg whites with water until foamy. Gradually add the sugar, continuing to mix until you obtain a firm meringue. In another bowl, whisk the egg yolks with the oil, then incorporate them into the egg white mixture. Add the flour mixed with cocoa, gently folding with a wooden spatula. Pour the mixture into the prepared baking pan and bake for 35-40 minutes in a preheated oven at 175°C. Check for doneness with a toothpick.
- Brownie layer: Separate the egg whites from the yolks. Beat the yolks with the sugar and oil until you get a sweet mayonnaise. Add the water and mix for another 2 minutes. In a bowl, mix the flour with the baking powder and incorporate it into the yolk mixture. Beat the egg whites until foamy and carefully fold them in, mixing from top to bottom. Pour into a greased pan and bake for 30 minutes at 175-180°C. Allow to cool.
2. Preparing the creams
- Cream 1: Hydrate the gelatin in 3 tablespoons of water. Mix the yogurt with the cherry syrup and sugar. Whip the cream, then take a few tablespoons of yogurt and mix with the melted gelatin in a water bath. Incorporate the mixture into the remaining yogurt and add the whipped cream. Mix well.
- Cream 2: Melt the chocolate in a water bath. Whip the cream and add the melted chocolate, mixing until smooth. Cut the dark chocolate into small pieces and incorporate them.
- Cream 3: Hydrate the gelatin in 3 tablespoons of water. Mix the mascarpone with the cream cheese, syrup, and sugar. Take a few tablespoons of the mixture and mix with the melted gelatin, then pour it over the remaining mixture. Add the whipped cream and mix.
3. Preparing the syrup
Caramelize the sugar in a saucepan, then add the water. Once the sugar has melted, remove from heat and add the rum essence and lemon peel. Let it cool.
4. Assembling the cake
- Place one layer of almond cake on a platter. Soak evenly with syrup. Add cherries on top, followed by the yogurt cream.
- Place a layer of brownie, soak, then add the ganache cream. Continue with another layer of brownie, soak, add cherries and mascarpone cream.
- Finish with the last layer of almond cake, which you soak again.
5. Decorating the cake
Cream the butter with sugar until creamy, then cover the cake with this mixture. Coat it with fondant and decorate as desired. Whether you choose sugar paste flowers or a minimalist design, let your imagination run wild!
Practical Tips
