When I first made these ombré cupcakes, I wanted something that looked good on a platter without being complicated. The differences in shade between the layers are subtle, but that’s what gives them an elegant appearance without requiring too much effort. If you have a bit of patience while baking, the result turns out really neat.

Ingredients

For the sponge:
6 eggs
6 tablespoons sugar
6 tablespoons oil
6 tablespoons flour
1 teaspoon baking powder

For the cream:
100 ml liquid cream
200 g white chocolate

Food coloring (for tinting the layers). Optional, if you want natural variants, you can use plant-based colorants, but the shades will be paler and harder to achieve.

Preparation method

1. Preparing the layers
Crack the eggs into a large bowl and beat them well with the sugar until the mixture becomes lighter and frothy. Gradually add the oil, continuing to mix. Sift the flour together with the baking powder over the mixture and fold them in with a spatula to maintain the airy texture.
Divide the resulting mixture into four equal parts. Color each part with different shades of food coloring (from a very light shade to a more intense one). If using liquid coloring, add it gradually to avoid making it too strong.
Preheat the oven to 180°C. Line a baking tray with a diameter of about 20 cm with parchment paper. Pour in the first part of the mixture and level it out. Bake each layer separately for about 10-12 minutes or until firm to the touch. Remove the layer onto a wire rack to cool and repeat for the other shades.
Once completely cooled, cut the layers with a pastry ring or a glass into the desired shape (circles, squares, etc.). Keep each shade separate so you can alternate them during assembly.

2. White chocolate cream
Heat the liquid cream in a bowl over a double boiler or in the microwave (be careful not to let it boil). Add the broken pieces of white chocolate to the hot cream and slowly stir with a spatula until it completely melts and the mixture becomes homogeneous.
Cover the bowl and place it in the refrigerator to cool well (at least an hour). After cooling, whip the cream until it becomes airy and slightly lighter in color.

3. Assembly
On a platter or tray, place a disc of sponge from the lightest shade, then add a thin layer of white chocolate cream. Continue with the next shade and so on until you finish all four shades, alternating the cream layer between them.
At the end, you can decorate the cupcakes as you wish: stick with the white chocolate cream, or add some sugar paste flowers, chocolate flakes, or anything you prefer.

Why I make this recipe often

I find this recipe useful because I can prepare everything in advance, and the assembly is simple. Since the layers are baked separately, I can play with the shades as I like. They don’t dry out quickly, and the cream is stable and doesn’t run.

Tips
Mix the sponge gently after adding the flour to keep it fluffy.
If you don’t have four trays of the same size, bake them one at a time, washing the tray between layers to avoid mixing the colors.

Substitutions
For the cream, you can also use milk chocolate if you don’t have white chocolate, but the color won’t be as light.

They can also be cut into square or rectangular shapes, not just circles.

I used gel food coloring for the layers because it doesn’t change the texture. With liquid coloring, you risk making the mixture too heavy.

Can I add fruits to the cream?
For this simple white chocolate cream, it’s not ideal, as the fruits can release water and it won’t layer as nicely.
