1. Preparing the crust
The first step in making our delicious tart is to take care of the crust. Start by separating the egg whites from the yolks. Beat the egg whites with 2 tablespoons of sugar using an electric mixer on high speed until you get a firm, glossy meringue. This step is crucial for achieving a fluffy crust.

In another bowl, beat the egg yolks with the remaining 2 tablespoons of sugar, vanilla sugar, vanilla essence, and lemon or orange zest. Gently fold this mixture into the meringue from the top down to avoid losing air from the egg whites.
