Crispy Cheese Cake - An Unforgettable Delight

Preparation time: 20 minutes
Baking time: 40 minutes
Total time: 1 hour
Number of servings: 12 servings

If you're looking for a quick and delicious dessert, the crispy cheese cake is the perfect choice! This simple recipe, inspired by Miha's repertoire, combines the soft texture of cheese with a fluffy base and a crunchy caramel crust, offering a contrast of flavors and textures that will captivate you. Let's get started!

Ingredients:

For the base:
- 2 eggs
- 150 g sugar
- 300 g yogurt
- 4 tablespoons oil (choose a neutral oil, like sunflower oil)
- 50 ml milk
- 300 g flour (about 2 cups)
- 1 teaspoon baking powder
- vanilla essence

For the cheese cream:
- 300 g cottage cheese (you can also use ricotta for a finer texture)
- 100 g sugar
- 3 tablespoons sour cream
- 2 eggs
- vanilla essence

For the crust:
- 100 g sugar
- 50 g butter
- 50 ml liquid cream
- 1 cup cornflakes (choose plain, unsalted flakes)

Instructions:

1. Preparing the base: In a large bowl, beat the eggs with a pinch of salt until frothy. Gradually add the sugar and vanilla essence, continuing to mix to achieve an airy composition. Incorporate the yogurt and milk, then gradually add the oil, like making mayonnaise, to ensure an even emulsion.

2. Adding the dry ingredients: Sift the flour together with the baking powder and fold them into the wet mixture, stirring gently until you obtain a homogeneous dough with a consistency similar to thick sour cream.

3. Baking the first layer: Divide the dough into two equal parts. Pour the first half into a baking tray lined with parchment paper, leveling it evenly. Bake in a preheated oven at 180°C (low heat) for 10 minutes until it becomes slightly firm.

4. Preparing the cheese cream: While baking, prepare the cheese filling. Mix the cottage cheese with the sugar, adding sour cream and eggs, along with the vanilla essence. If the cream is too thick, you can add a little milk to achieve a finer texture.

5. Assembling the cake: Remove the tray from the oven and add the cheese cream over the base layer. Then pour the other half of the dough on top, ensuring it is evenly distributed. Bake the cake for 30 minutes until it is nicely browned on top.

6. Preparing the crust: In a pan, caramelize the sugar until it turns golden. Add the butter and liquid cream, stirring constantly until the sugar is completely dissolved. Fold in the cornflakes, stirring gently to avoid crushing them.

7. Finalizing the cake: After the cake is baked, remove it from the oven and pour the caramel with cornflakes on top, allowing it to cool completely.

8. Serving: Slice the cake with a sharp knife to obtain clean pieces. It can be served plain or with a berry sauce for an extra touch of freshness.

Variation suggestion: You can add some pieces of fruit (like apricots or peaches) to the cheese cream for extra flavor and aroma.

This crispy cheese cake is perfect for any occasion, whether it's a gathering with friends, a dessert after dinner, or simply a personal treat. Enjoy every bite and savor the moment!
