Baking time: 30 minutes
Number of servings: 12

Ingredients

For the cake base:
- 10 eggs
- 10 tablespoons of oil (preferably sunflower oil)
- 10 tablespoons of sugar
- 10 tablespoons of flour

For the banana cream:
- 1 liter of milk
- 6 tablespoons of flour
- 8 tablespoons of sugar
- 200 g powdered sugar
- 250 g butter (at room temperature)
- 4-5 ripe bananas

For the syrup:
- 250 ml water
- 3 tablespoons of sugar
- 1 vanilla essence

For decoration:
- Cake candies (or any other type of desired decoration)
- 1 packet of whipped cream (150 ml milk for preparation)

Step-by-step instructions

Step 1: Preparing the cake base

1. Separate the eggs: In a large bowl, separate the yolks from the whites. It is important to ensure that no trace of yolk remains in the whites to achieve a firm foam.

2. Mix the yolks: Beat the yolks with the oil, adding it gradually, like mayonnaise. Then, add the sugar and continue mixing until the mixture becomes creamy and light in color.

3. Whipping the whites: In another bowl, beat the egg whites until stiff peaks form. It is essential that the bowl is clean and dry to achieve a perfect foam.

4. Combining the mixtures: Carefully add the beaten yolks into the whites and gently fold with a spatula, using up and down motions. Then, fold in the sifted flour, mixing gently to avoid losing air from the mixture.

5. Baking the base: Pour the mixture into a rectangular pan, greased with a little oil and lined with margarine. Bake in a preheated oven at 180 degrees Celsius for 30 minutes, or until the base is golden and a toothpick inserted in the middle comes out clean.

Step 2: Preparing the syrup

6. Prepare the syrup: In a pot, bring the water to a boil together with the sugar. Once it starts boiling, turn off the heat and add the vanilla essence. Let the syrup cool down.

Step 3: Preparing the banana cream

7. The cream: In a bowl, take a few tablespoons of milk and mix them with the 6 tablespoons of flour to avoid lumps. Bring the rest of the milk to a boil, and when it starts to heat up, add the flour mixture. Stir continuously to prevent sticking.

8. Finishing the cream: Once the cream boils, add the sugar and stir until completely dissolved. In another bowl, cream the butter with the powdered sugar until fluffy. After the cream has cooled slightly, incorporate it into the butter, mixing well. Mash the ripe bananas and add them to our cream.

Step 4: Assembling the cake

9. Cutting the base: Once the base has cooled, cut it into 3 equal parts.

10. Assembling: Between layers, add the banana cream, and if desired, add banana slices for extra flavor. After finishing the assembly, cover the cake with the remaining cream.

11. Decorating: Decorate the cake with cake candies or whipped cream, according to preferences. Imagination is key here!

Chef's tip

For an even more intense flavor, try adding a little cinnamon or nutmeg to the banana cream. You can also experiment with different types of chocolate to decorate the cake. Use well-ripened bananas to achieve a more pronounced flavor and a smoother texture in the cream.
