Preparation time: 30 minutes
Baking time: 30-40 minutes
Total time: Approximately 1 hour and 10 minutes
Number of servings: 8-10 servings

Ingredients needed for the dough:
- 350 g flour (preferably type 000 for a fine texture)
- 170 g sugar
- 200 g margarine (or butter for a richer taste)
- 1 egg
- 1 packet of vanilla sugar
- A pinch of salt

Ingredients for the filling:
- 3 slightly sour apples (Golden is an excellent choice)
- 1 mango (make sure it's ripe but not too soft)
- 1 packet of vanilla sugar
- 100 g sugar
- Juice of 1 lemon
- Cinnamon (to taste, but recommended between 1/2 and 1 teaspoon)

Ingredients for the milk cream:
- 1 egg + 1 yolk
- 2 tablespoons cornstarch
- 70 g sugar
- 300 ml milk
- 1 packet of vanilla sugar
- 1 tablespoon lemon juice

Garnish – Caramel Sauce:
- 1 cup sugar (approximately 200 g)
- 60 g butter
- 200 ml liquid cream (preferably La Dorna for a consistent taste)

Step by Step – Your Guide to a Perfect Tart

1. Preparing the dough:
I recommend starting by preparing the dough so that it has time to cool. In a large bowl, sift the flour and add the sugar and a pinch of salt. Mix the dry ingredients well. Then, cut the margarine into small cubes and add them to the flour mixture. Using your fingers or a pastry mixer, combine the ingredients until you achieve a texture similar to breadcrumbs.

Add the egg and mix well until the dough becomes homogeneous. Form a ball from the dough, cover it with plastic wrap, and let it chill in the refrigerator for 30 minutes. This step is essential for obtaining a crunchy and easy-to-shape crust.

2. Preparing the filling:
While the dough is cooling, you can prepare the delicious filling. Wash the apples and cut them into quarters, removing the seeds but leaving the skin for added texture and nutrients. Slice the apples thinly and sprinkle them with lemon juice to prevent oxidation.

Peel the mango, cut it into slices, and then into cubes. Add the mango cubes over the sliced apples. Sprinkle the sugar, vanilla sugar, and cinnamon, gently mixing to combine the flavors.

3. Milk cream:
In another bowl, use a mixer to beat the egg and yolk with 70 g sugar until the mixture becomes frothy and doubles in volume. Add the cornstarch, vanilla sugar, and lemon juice, mixing continuously. Then, gradually add the milk, stirring until homogeneous.

4. Assembling the tart:
Take the dough out of the refrigerator and roll it out on a floured surface, forming a disc about 3 mm thick. Place the dough in a greased tart pan with margarine or butter, making sure to cover the edges well. Trim the excess dough from the edges.

Place the apple and mango mixture at the bottom of the tart, then carefully pour the milk cream over it. Sprinkle a bit of granulated sugar on top to form a golden and crunchy crust during baking.

5. Baking:
Preheat the oven to 180°C. Place the tart in the oven and bake for 30-40 minutes, or until the cream is set and the surface is golden. Allow the tart to cool slightly before removing it from the pan.

6. Preparing the caramel sauce:
In a small saucepan, add the sugar and caramelize it over low heat, stirring constantly to avoid burning. When the sugar has completely melted and turned golden, add the butter and mix well. Once the butter has melted, gradually pour in the cream, stirring continuously until the sauce becomes homogeneous. Let the sauce cool to room temperature; you can store it in the refrigerator for up to a month!

Serving and suggestions:
When you're ready to serve the tart, you can slice it and pair it with a generous portion of caramel sauce. Vanilla ice cream is the perfect choice to complement this dessert, bringing a pleasant contrast between warm and cold.

Helpful tips and variations:
- If you want to add an exotic touch, you can try including other fruits, such as pineapple or kiwi.
- Instead of margarine, use butter for a more intense flavor.
- You can replace white sugar with brown sugar for a deeper flavor.
- If you enjoy more intense flavors, feel free to add a splash of rum or almond essence to the milk cream.
