No-bake meringue cake

This no-bake meringue cake has crushed meringues underneath and on top of the whipped cream, and sets in the freezer without ever going in the oven. There are crisp pieces in the middle, wrapped in cream whipped with sugar, and the slice softens a little after you take it out. I use dry, crisp meringues because they crumble more easily between your fingers. Prep: 10 minutes. Cook: 0 minutes. Chill: 3-4 hours and 30 minutes. Total time: 3 hours 40 minutes-4 hours 40 minutes. Servings: 8. Approximately 360 kcal and 3 g protein per serving.
Ingredients
- 200 g meringues
- 500 g whipping cream
- 50 g sugar
- 1 sachet vanilla sugar (8 g)
Preparation
1. Cut a circle of parchment paper to fit the base of a springform pan. If you don't have one, use a round container 30-35 cm in diameter. Place the paper on the bottom. 2. Crumble half the meringues and scatter them over the paper in as even a layer as possible. 3. Beat the cold cream with a mixer for 2 minutes. Add the sugar and vanilla sugar, then beat for 1 more minute, until the whisk marks are visible on the surface of the cream. 4. Spoon the cream over the meringues and spread it evenly with a spatula. Crumble the rest of the meringues over the top. 5. Leave the cake in the freezer for 3-4 hours, until firm. Open the springform pan and transfer the cake to a serving plate. Take it out of the freezer 30 minutes before serving.
Notes
Plain meringues, without filling, make a more even layer than ones with cream in the middle. The liquid cream must have at least 30% fat; lower-fat cream can be difficult to whip and may stay soft. The cream layer can slump if it isn't whipped enough, and then the slices won't hold together as well. You can make it the day before and keep it covered in the freezer. Serve a few raspberries or redcurrants alongside each slice for a tart note. For a different color, cocoa meringues work too; the cake contains dairy and eggs.
Frequently asked questions
Can you whip cream without a mixer?
Yes. With a whisk, beat it for about 6-8 minutes, until the whisk marks remain visible on the surface.
What should I do if the cream turns grainy?
Stop the mixer and fold in 1 tablespoon of cold liquid cream; it may smooth out cream that is only slightly overwhipped.
Can I use small meringues?
Yes, crumble them into pieces no larger than 2 cm so they spread out without leaving big clumps.
How do I slice the cake without crushing the meringues?
Hold a serrated knife under hot water for 5 seconds, then wipe it before each cut.
