To prepare a delicious dessert, start by whipping liquid cream with vanilla sugar. Make sure the cream is well chilled to achieve a fluffy texture, then put it in the refrigerator to firm up. In a large bowl, add the egg yolks and powdered sugar. Mix the ingredients on medium speed until you get a creamy and light-colored mixture, which will provide a perfect base for your cream.
After the yolks are well mixed, gradually add the mascarpone, one tablespoon at a time, continuing to mix on low speed. This step is essential to avoid the formation of air bubbles, ensuring that the cream will be smooth and velvety. Once you have incorporated all the mascarpone, take the cream out of the refrigerator and carefully fold it into the mixture using a spatula to maintain the air in the cream.
In the next step, prepare the coffee. Use freshly brewed coffee, preferably made from quality coffee, to give your dessert an intense flavor. Add the rum essence and the two cartons of milk, mixing well to obtain a homogeneous composition. Now it’s time to assemble the dessert.
In a suitably sized dish, place a layer of ladyfingers that you have quickly soaked in the flavored coffee. Make sure the ladyfingers do not stay too long in the coffee so they do not disintegrate, but are only lightly moistened. After the first layer of ladyfingers, add a generous layer of cream, followed by another layer of ladyfingers, which you will soak again in coffee. Finish with a final layer of cream, smoothing the surface well.
To give your dessert an elegant appearance, sprinkle cocoa on top, using a fine sieve to achieve an even distribution. If you wish to add a personalized touch, reserve three tablespoons of the previously made cream. Place this cream in a piping bag and use it to elegantly decorate the surface of the dessert, creating shapes or spirals that will delight the eyes.
Leave the dessert in the refrigerator for a few hours, so the flavors can blend perfectly. Before serving, make sure it is well chilled.
