Muffins are a perfect treat for any occasion, and the recipe below will take you on a journey full of flavors and culinary joys. We start by carefully melting the butter, making sure it doesn’t burn. Once melted, we will let it cool slightly, so it doesn’t coagulate the eggs when we combine them. In a large bowl, we will add the eggs and sugar, which we will whisk vigorously with a whisk or mixer until the mixture doubles in volume and becomes a fluffy cream, a bright yellow. This stage is essential for achieving an airy texture for the muffins.

After obtaining a homogeneous mixture, we will incorporate the melted butter, pouring it gradually while constantly mixing. Next comes the milk, which will add moisture and make the muffins fluffier. Then, we add the rum essence and grated orange peel, which will provide an enticing aroma to the muffins. These aromatic ingredients are the key to success and will transform every bite into an unforgettable experience.

Once all the liquid ingredients are well incorporated, we will add the flour and baking powder. It is important to sift them to avoid lumps and ensure an even distribution of the leavening agent. We mix gently until the flour is completely incorporated, being careful not to overdo it, so as not to develop the gluten.

The resulting mixture will be poured into silicone muffin molds, filling them only up to 3/4 of their capacity, to allow the muffins to rise nicely in the oven. We place the molds in a tray and put them in the preheated oven at 170-180 degrees Celsius, letting them bake for 25 minutes. When the muffins are ready, we carefully take them out of the oven and let them cool on a rack.

In the meantime, we prepare the delicious cream. In a bowl, we add the heavy cream and sour cream, both well chilled, then we add the powdered sugar and vanilla. We whisk until the mixture becomes a slightly airy foam, but not too firm. In a separate bowl, we whisk the mascarpone until creamy, then add it to the whipped cream, continuing to whisk gently to achieve a smooth and homogeneous texture.

To add extra flavor, we will soak the muffins with coffee, being careful not to use too much liquid, so they don’t become too wet. We let them absorb the coffee aroma for about 15 minutes. Then, using a pastry bag, we apply the cream to each muffin, creating an attractive appearance. Finally, we dust with cocoa, providing a pleasant contrast and a touch of elegance.

The muffins will cool in the refrigerator for at least an hour before being served, to allow the flavors to develop and blend. The final result will be a delicacy that will impress any guest. It is a simple recipe but with a spectacular result, perfect for a special dessert. I ended up with 13 delicious muffins, but the number may vary depending on the size of the molds used.
