To prepare this delicious cake, we start by gathering the necessary ingredients: sugar, cocoa, butter, margarine, eggs, flour, baking powder, vinegar or lemon, orange zest, vanilla sugar, egg whites, nuts, and of course, coconut for decoration. In a large bowl, we add the sugar, cocoa, butter, and margarine. We mix all the ingredients well until we obtain a homogeneous composition. Then, we place the bowl on low heat, stirring constantly to prevent sticking.
Once the composition has begun to heat up and thickens, you stop a cup of this delicious syrup to use later for glazing the cake. The rest of the composition is left to cool slightly. When it becomes warm, it is time to start adding the ingredients. We begin by incorporating the egg yolks, one by one, mixing well after each. Then, we add the flour, baking powder dissolved in a few drops of vinegar or lemon juice to activate the leavening reaction.
The next step is to add the orange zest, which will give a fresh and pleasant aroma to the cake. We also add the vanilla sugar for extra sweetness. It is time to incorporate the beaten egg whites, which will make the cake fluffy and airy. We carefully mix using a spatula to preserve the air in the egg whites.
Finally, we add the crushed nuts, which will add a crunchy texture. We prepare the baking pan by greasing it with oil and lining it with flour to prevent sticking. We pour the composition into the pan and level it evenly. We preheat the oven to low heat and put the pan in. The cake will bake for about 30 minutes, but it is important to check it after 30 minutes with a toothpick to ensure it is ready.
When the cake is baked and golden brown, we take it out of the oven and, while it is still warm, pour the reserved syrup over it, letting it absorb. We decorate with grated coconut, which will add an attractive appearance and a special aroma. We let the cake cool completely before cutting and serving it.
