The preparation of the cream for this delicious dessert starts with a classic yet flavorful mixture. In a small pot, we will add the eggs and sugar, which we will beat well, ensuring we achieve a smooth consistency. This step is essential, as the combined eggs and sugar will form the creamy base of our dessert. Once the mixture begins to simmer over low heat, we must be careful not to let the eggs coagulate, so we stir constantly.

Meanwhile, we take care of the gelatin. It will be hydrated in 100 ml of cold water, allowing it to absorb the liquid for a few minutes. The hydrated gelatin will add a fine texture and help the cream to set, providing stability. When the egg and sugar mixture is still warm, we add the hydrated gelatin, stirring quickly to ensure it integrates completely.

Now comes an important step: whipping the cream. This will add a note of airiness and lightness to our cream. Once the cream is whipped well, we add it over the cream cheese, vanilla essence, and the egg mixture with gelatin. We gently mix using a spatula to maintain the fluffy texture of the cream.

In parallel, we prepare the caramel syrup. In a saucepan, we caramelize 150 grams of sugar, being careful not to burn it. After the sugar turns a golden color, we add water and the remaining sugar, stirring continuously until it completely dissolves. It is important not to add flavors to the syrup, as we want to keep the intense taste of the caramel.

To assemble the dessert, we take the ladyfingers and quickly dip them in the cooled syrup, ensuring they soften but without letting them disintegrate. We place the ladyfingers side by side, forming a base layer. Over this layer, we pour half of the cream obtained, smoothing it with a spatula. We continue with another layer of ladyfingers, and then add the remaining cream on top.

For a special appearance, we decorate the dessert with fresh strawberries, which will add a note of freshness and a pleasant contrast to the sweetness of the caramel. It is important that the dessert is left in the refrigerator for about 5 hours to set and allow the flavors to develop. When it comes time to serve, we will have a spectacular dessert with delicious layers and a taste that will delight any palate. Enjoy!
