To prepare a delicious and refined dessert, we will create a simple yet flavorful recipe that combines the sweetness of sugar with the fresh aroma of lemon and the fine texture of semolina. Start by gathering all the necessary ingredients and ensure you have the required utensils at hand, as each step is important to achieve an exceptional result.

The first step is to put the sugar and water in a pot. Place the pot over medium heat and stir well to dissolve the sugar. Let the mixture boil for 8 minutes, being careful to watch for the moment when the water starts to boil. This is when you begin counting the 8 minutes. After the time has passed, add the freshly squeezed lemon juice, which will provide a pleasant contrast of acidity. Continue to boil the mixture for another 3 minutes to intensify the flavors.

Meanwhile, in another pot, mix the butter at room temperature with the semolina using the spiral beaters of the mixer. The mixture should become homogeneous and creamy. Once you achieve a pleasant consistency, transfer the composition to another pot and place it over low heat. Stir constantly, as the semolina tends to stick to the bottom of the pot. This process will take about 20-25 minutes, during which the composition will take on a brownish hue, indicating that it is ready.

Once the semolina mixture has reached the desired color, carefully add the hot mixture of sugar water and lemon juice over the semolina and butter. This is when the flavors will start to meld, and the dessert will take on a creamy texture and refined taste. Add the grated zest of one lemon and gently mix for about 30 seconds to allow the flavors to combine.

Prepare the molds in which you will pour the composition. I used small molds with 16 ridges, which I rinsed beforehand with cold water to prevent sticking. Pour the composition into the molds, being careful to distribute it evenly. Let it cool at room temperature for an hour to maintain its shape.

After they have cooled, turn the molds onto plates, being careful not to break them. Finally, sprinkle powdered cinnamon on top, which will add extra flavor and a pleasant appearance. Garnish with almonds to taste, to add a crunchy note. This dessert is perfect to be enjoyed alongside a cup of tea or coffee and will surely be appreciated by all who taste it.

 Ingredients: for 12 pancakes: - 100 g granulated sugar - 1 tablespoon of lemon juice (I used two tablespoons of lemon juice) - 150 g butter at room temperature (soft but not melted) cut into pieces - 150 g semolina - grated zest of one large lemon - 1 teaspoon ground cinnamon - 750 ml water
