This pear cheesecake is an innovative recipe, perfect for adding a touch of freshness to your menu. Unlike classic cheesecake, this version does not require gelatin, but it maintains its shape due to the carefully chosen ingredients, and its creamy texture will surely win you over. You can also experiment with gelatin in your next preparation to adjust its consistency, but I recommend trying the recipe as it is first.

To begin, prepare the delicious crust from cookies and almonds. In a food processor, crush the cookies together with the almonds until you achieve a fine texture. Then, melt the butter and add it to the cookie mixture, mixing well until everything is evenly incorporated. This mixture is pressed into a pan, and with the help of a spatula or your hands, press down firmly to form a compact base. Once you are done, place the pan in the refrigerator for about 30 minutes so that the crust can set.

Meanwhile, take care of the pears. Peel them and cut them into cubes. In a double-bottomed pot, add the pear cubes, honey, lemon juice, and butter. Cover the pot with a lid and cook on low heat for 15 minutes, stirring occasionally. This process will allow the pears to become soft and absorb the flavors, and once they have cooled, you will be able to integrate them into the cheesecake mixture.

In a large bowl, combine the ricotta with the powdered sugar, mixing well to achieve a creamy and homogeneous paste. Add the cooled pears and, finally, gently fold in the whipped cream, being careful to keep it airy. Once all the ingredients are well mixed, pour the mixture over the cookie crust, leveling the surface with a spatula and placing everything in the refrigerator for at least 3 hours. I personally prefer to leave it overnight so that the flavors blend perfectly.
