To prepare a delicious pumpkin pie, we will start by steaming the pumpkin. Choose a suitable pumpkin, peel it and remove the seeds, then cut it into cubes. Place the pumpkin cubes in a steamer and let them cook until tender. Once cooked, puree the pumpkin using a blender or a potato masher until you achieve a smooth puree. This puree will be the base of our filling, bringing a rich flavor and creamy texture.

Meanwhile, let's work on the dough. In a large bowl, combine the flour, sugar, one egg, melted butter, salt, and grated orange zest. Mix the ingredients until you obtain a homogeneous dough. Cover it with plastic wrap and let it rest in the refrigerator for 30 minutes. This step is essential as it allows the butter to solidify again, giving the dough a better texture.

After the dough has rested in the refrigerator, roll it out on a floured surface to form a thin sheet. Place the sheet in a 22 cm greased and floured tart pan. You can also add a sheet of parchment paper to facilitate the removal of the pie after baking. Put the pan back in the refrigerator while we prepare the filling.

In a separate bowl, beat the eggs with the liquid cream or sour cream, sugar, cinnamon, and ginger. Then add the pumpkin puree and mix well until you have a uniform mixture. It is important that all the ingredients are at room temperature for better incorporation.

To prevent the dough from becoming soggy during baking, sprinkle a few tablespoons of ground almonds or ground nuts on the bottom of the tart after pricking the dough with a fork. This layer will help absorb excess moisture. Then add the pumpkin filling over the almond layer.

Bake the pie in a preheated oven at 200 °C for 10 minutes, then reduce the temperature to 170 °C and continue baking for 40 minutes. It is important to do the knife test; when poking the edges of the pie, they should be almost dry, while the center should appear slightly moist.

Once the pie is baked, let it cool completely before serving. It is delicious both plain and with a topping of whipped cream or vanilla ice cream. This pumpkin pie will surely become a favorite in any season!
