Plums are delicious and fragrant fruits, perfect for turning into a savory dessert. Start by preparing the plums, cutting them in half and removing the pits. Place them in a pot and add citrus juices, such as orange and lemon juice, which will bring a note of freshness and a pleasant contrast to the natural sweetness of the plums. Add three tablespoons of sugar to enhance the fruit's flavor and bring everything to a boil. Let the plums simmer for 10 minutes, stirring occasionally to prevent sticking.

Once the plums have softened and turned into a smooth puree, gradually add the semolina while constantly stirring to prevent lumps from forming. Continue to boil the mixture for another 4 minutes, until the semolina absorbs the liquid and becomes a homogeneous mass.

Separately, in another bowl, beat the egg whites until they form a firm, shiny foam. It is important that these egg whites are added to the plum mixture when it is warm but not too hot, to avoid coagulating them. Gently fold in the egg whites using a spatula to maintain the aeration of the mixture.

In another pot, bring 850 ml of milk to a boil along with a split vanilla pod, which will infuse the milk with a rich flavor. Meanwhile, in a bowl, whisk the egg yolks with sugar, flour, and 150 ml of milk until you obtain a creamy and homogeneous mixture. When the milk starts to boil, add the egg yolk mixture, stirring vigorously to prevent lumps from forming. Let it simmer on low heat, stirring continuously, until the mixture thickens and comes to a boil. Be careful, as if you do not stir constantly, it may stick to the bottom of the pot.

Now you have two delicious components: a slightly sweeter plum puree and a fine vanilla cream. You can assemble the dessert in layers, alternating between the plum puree and the vanilla cream, or you can serve each component separately, garnished with a few slices of fresh plums for an attractive appearance. This dessert is not only tasty but also an explosion of textures and flavors, perfect for impressing any guest.
