Original Tiramisu Recipe

Place the bowl over a double boiler (a pot of gently boiling water) and continue to stir for 8-10 minutes, until the mixture thickens slightly. 2. Incorporating the mascarpone:
Once the egg yolk mixture has cooled, add the mascarpone and a pinch of salt. Gently mix with a spatula or whisk, being careful not to deflate the mixture. It is important that the mascarpone is at room temperature for easy incorporation.
3. Preparing the coffee:
In a cup, prepare the strong coffee, then let it cool. Add the amaretto liqueur if using, to enhance the dessert's flavors.
4. Assembling the tiramisu:
Start by quickly dipping the ladyfingers in the coffee, being careful not to leave them too long to avoid them becoming too soft. Place a layer of ladyfingers at the bottom of a dish or serving tray.
5. Adding the cream:
Over the first layer of ladyfingers, spread a generous layer of mascarpone cream. Continue alternating layers of ladyfingers and cream until you finish the ingredients, making sure to end with a layer of cream.
6. Chilling:
Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, ideally overnight. This chilling time is essential for the flavors to meld and for achieving the perfect texture.
7. Serving:
Before serving, sprinkle cocoa powder on top of the tiramisu for an elegant appearance and flavor contrast. You can use a sieve to achieve an even layer.

Whisk the egg yolks with sugar in a heat-resistant bowl. Only after mixing the yolks with sugar can you place the bowl over a double boiler, adding the milk and mixing well. After thoroughly mixing the milk, and finally cooking it over the double boiler, you will achieve that thick cream. Let it cool, and when it is cool, add the mascarpone directly from its container. Fold in the whipped egg whites, mixing everything from the pot. Take a loaf pan (mine is from Jena), line the bottom with parchment paper (don't forget), then add a few tablespoons of the cream obtained, spreading it on the bottom of the loaf pan, followed by a layer of ladyfingers soaked in cold coffee. Do not soak the ladyfingers too much, as they will become soggy. Then, add another layer of cream, followed by ladyfingers, with the last layer being cream. Cover the pan with aluminum foil, refrigerate for at least 6 hours, then invert the contents onto a platter, remembering to remove the parchment paper and dust with cocoa.
