I propose a light and refreshing dessert, perfect for enjoying in any season. This recipe combines the delicious taste of almond cookies with the creaminess of ricotta and the fresh flavors of citrus, resulting in a special dish that can impress any guest.

To start, you will need 250 grams of almond cookies, which you can make at home, as mentioned earlier. Choosing natural ingredients is essential, and homemade almond cookies provide an authentic taste and perfect texture. Additionally, 125 grams of clarified butter is a key ingredient. This is obtained by removing the water and proteins from milk, giving it an intense flavor and a higher smoke point, ideal for high-temperature cooking. You will also need the grated zest from 1/2 lemon; make sure to use organic, untreated lemons to benefit from all the natural flavors.

Start by letting the butter melt at room temperature. Then, in a food processor, grind the almond cookies until you obtain a fine powder. Combine this powder with the melted butter, mixing well until you achieve a homogeneous dough. Transfer the dough to a cake pan and gently press to form the base. Cover with plastic wrap and refrigerate for one hour to firm up.

Meanwhile, prepare the ricotta cream. In a bowl, mix the ricotta with the sugar until smooth. Then, heat ½ of the gelatin in cream, stirring constantly to avoid lumps. In a saucepan, heat a little jam to make it more fluid, then incorporate the orange pieces and ½ of the remaining gelatin. Boil for 2 minutes, stirring constantly. Once the mixture has cooled, pour it over the ricotta cream.
