If you want to add an extra note of flavor, you can also include 100 g of finely chopped candied orange peel or 150 g of orange jam.

Start by preheating the oven to 180°C and greasing a loaf pan with a little oil or butter and sprinkling flour to prevent sticking. In a large bowl, beat the eggs together with the sugar until the mixture becomes frothy and doubles in volume. Then, add the oil and orange juice, mixing well to combine the ingredients.

In another bowl, sift the flour together with the baking powder and salt. Begin to gradually incorporate the flour mixture into the wet mixture, stirring with a spatula or wooden spoon until you obtain a homogeneous batter. If you choose to use candied orange peel or jam, add them now, gently mixing to distribute them evenly in the batter.

Once the batter is well combined, pour it into the prepared pan. Bake in the preheated oven for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. It is important not to open the oven in the first 30 minutes of baking to allow the cake to rise evenly.

After the cake is done, let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. It is kept at medium heat for about 30 minutes, until it passes the toothpick test. The orange cake is left to cool in the mold. It can be soaked with the remaining orange juice.
