Base: Start by preparing a large bowl in which you will beat the six whole eggs. Make sure the eggs are at room temperature to achieve a homogeneous and fluffy mixture. Add the six tablespoons of water and the sugar, the amount of 500 grams. Use an electric mixer on medium speed to beat the mixture for about 10 minutes, until it becomes a dense foam and a bright white. This step is essential as the air incorporated into the mixture will make the base light and fluffy.

Once you have achieved a perfect foam, start adding the flour in a rain-like manner. It is important to use good quality flour, ideal for cakes, which contains an appropriate amount of gluten. Mix the flour with a packet of baking powder to ensure even rising of the base. Sifting the flour before adding it to the mixture is an effective method to prevent lumps from forming and to introduce air into the composition.

Start incorporating the flour with a spatula or a wooden spoon, being careful to use upward motions to keep the air in the egg foam. It is important not to overmix, as the base may become dense. Continue mixing until there are no visible traces of flour and the composition becomes homogeneous.

After obtaining a fine dough, preheat the oven to 180 degrees Celsius. Prepare a baking tray, which you can grease with butter and sprinkle with flour, or you can use parchment paper to prevent sticking. Pour the dough into the tray, ensuring it is evenly distributed and that no air bubbles are left inside.

Place the tray in the preheated oven and let the base bake for about 30-35 minutes, or until it becomes golden and passes the toothpick test. Check the base by inserting a toothpick in the middle; if it comes out clean, the base is ready. After baking, let it cool in the tray for 10 minutes, then remove it to a rack to cool completely.
