Ladyfinger with Cherries
To prepare a delicious cherry cake, start by gathering all the necessary ingredients. You will need 4 fresh eggs, 200 g of granulated sugar, 100 ml of sunflower oil, 100 ml of mineral water, 300 g of flour, one packet of baking powder, and 400 g of cherries, fresh or from compote, according to your preference. Make sure the cherries are well washed, and if you are using cherries from compote, drain them well.
In a large bowl, start by whisking the eggs with the sugar, using a whisk or an electric mixer on medium speed. Continue until the mixture becomes creamy and the sugar dissolves completely. This will help achieve an airy texture for the cake. Then add the oil and mineral water, mixing continuously to incorporate the wet ingredients.
Next, add the sifted flour along with the baking powder. It is important to sift the flour to avoid lumps and achieve a fine batter. Mix with a spatula or with the mixer on low speed until all the ingredients are well integrated, but be careful not to overmix to avoid developing the gluten in the flour. The batter should be fluid but consistent.
Prepare a baking tray, preferably 20x30 cm, greasing it with a little oil and dusting it with flour. This will prevent the cake from sticking to the tray. Evenly place the cleaned and washed cherries on the bottom of the tray, making sure to distribute them evenly for a pleasant taste in every slice. Carefully pour the batter over the cherries, ensuring they are completely covered.
Preheat the oven to a low temperature of about 160°C. Place the tray in the preheated oven and let the cake bake for 30 minutes. It is important not to open the oven door in the first 20 minutes to prevent cold air from disrupting the baking process. After the time has expired, check the cake with a toothpick: if it comes out clean, it means it is ready.
When the cake is baked, take it out of the oven and let it cool slightly, then sprinkle powdered sugar on top for an attractive appearance and a sweet-sour taste. Cut the cake into portions and enjoy it with a cup of tea or coffee. This cherry cake will surely be a cherished dessert at any meal!
