Fruit tarts are a quick and elegant dessert, perfect for any occasion. With a fluffy base and fresh fruits, this simple recipe is sure to impress everyone. Let's get started!

Ingredients for the base:

- 4 egg whites
- 2 teaspoons vanilla extract
- 4 egg yolks
- 150 g sugar
- 200 g flour
- 1 packet baking powder (approximately 10 g)
- A pinch of salt

Ingredients for the filling:

- 300 g fresh fruits (strawberries, kiwi, blueberries, raspberries, or any other favorite fruits)
- 2-3 tablespoons peach or apricot jam for glazing (optional)
- Mint leaves for decoration (optional)

Preparation:

1. Preparing the bases: Start by preheating the oven to 180°C. Line a tart pan with parchment paper or grease it with butter and sprinkle a little flour to prevent sticking.

2. Beating the egg whites: In a clean bowl, beat the egg whites with an electric mixer on medium speed until frothy. Add the vanilla and continue mixing until stiff peaks form. This is a crucial step for an airy base, so don't rush the process.

3. Preparing the mixture: In another bowl, mix the egg yolks with the sugar until the mixture becomes creamy and light in color. This step will add richness to your tart. Slowly fold in the beaten egg whites into the yolk mixture, using a spatula to avoid losing the incorporated air.

4. Adding dry ingredients: Sift the flour together with the baking powder and a pinch of salt. Add these dry ingredients to the wet mixture, gently mixing to obtain a homogeneous batter. Be careful not to overmix, as the base may become dense.

5. Baking the bases: Pour the mixture into the prepared pan and level the surface. Bake in the preheated oven for 25 minutes or until the base turns golden and passes the toothpick test. Allow to cool completely before removing from the pan.

Preparing the filling:

6. Choosing the fruits: While the base cools, wash and prepare the fruits. If using strawberries, slice them, and for kiwi, you can slice or dice them. Choose fruits based on the season for the freshest flavors.

7. Assembling the tart: Once the base has cooled, arrange the fruits on top. If desired, you can warm the peach or apricot jam and use it to glaze the fruits, giving them a glossy and appetizing appearance.

Serving and variations:

Decorate the tart with fresh mint leaves for a color contrast and an extra hint of flavor. This tart is delicious served plain but can also be accompanied by a dollop of whipped cream or a scoop of vanilla ice cream for an even more decadent dessert.

Helpful tip: If you want to try a healthier version, replace part of the sugar with honey or maple syrup. You can also experiment with different fruit combinations, such as peaches and blueberries or mango and pineapple, to create a unique tart.

Enjoy this fruit tart recipe, a perfect dessert for warm days or to impress guests at a party!
