Fruit Tart
To prepare a delicious fruit tart, the first important step is to separate the egg whites from the yolks. The egg whites will be beaten with a mixer until they become firm, forming stable peaks. This process is essential as it will ensure a fluffy and airy texture of the batter. Gradually, we add a tablespoon of sugar, continuing to mix. It is recommended to use fine sugar for better dissolution. Once the egg whites are well beaten and have a shiny appearance, we add the yolks, mixing gently to incorporate them without losing the air in the mixture.
After the yolks are integrated, we can add our favorite flavors, such as vanilla extract, almond extract, or grated lemon zest, depending on the desired taste. These flavors will add an extra layer of flavor to the tart. The next step is to add the flour. It is important that it is sifted to eliminate any lumps and achieve a fine dough. The flour is added gradually, mixing with a spatula or spoon in a folding motion to maintain the air in the mixture.
Once the dough is homogeneous, it is transferred to the prepared baking pan. The pan should be greased with butter and lined with parchment paper so that the tart can be easily removed after baking. On top of the dough, the desired fruits are placed, which can be fresh or from a compote. Berries, peaches, apples, or strawberries are just a few excellent options that can be used, bringing a delicious contrast between the sweetness of the dough and the acidity of the fruits.
Once the tart is prepared, it is placed in the preheated oven at a medium temperature, approximately 180 degrees Celsius. Baking takes about 20 minutes, but it is good to check the tart from time to time. When the surface is lightly browned and a meringue forms, the tart is ready to be taken out. It is recommended to let the tart cool slightly before dusting it with powdered sugar to add a touch of elegance and a sweet note.
This tart can be served plain or alongside a scoop of ice cream, a dollop of whipped cream, or even with a chocolate sauce. It is perfect for any occasion, from a gathering with friends to a festive dinner. Enjoy your meal!
