Fruit Cake
To prepare a delicious strawberry cake, we start by organizing the necessary ingredients and utensils. Make sure you have on hand: 6 eggs, 200 g sugar, 100 ml oil, 100 ml mineral water or milk, 1 packet of vanilla sugar, 300 g flour, and 1 packet of baking powder. You will also need about 250 g of fresh strawberries, which you will wash, clean, and cut in half.
The first step is to separate the egg whites from the yolks. Use a clean bowl for the egg whites, as any trace of fat will prevent the foam from forming correctly. Beat the egg whites with a mixer on medium speed until they become frothy. Gradually add the sugar and continue mixing on high speed until you obtain a firm and shiny foam that will not detach from the bowl's walls. This is the aerated base of your cake, which will give it a fluffy texture.
After you have obtained the egg white foam, incorporate the yolks, gently mixing with a spatula or with the mixer on low speed. Make sure everything is well homogenized, then add the oil in a thin stream, continuing to mix. Now, it is time to add the mineral water or milk, along with the vanilla sugar, which will add an enticing aroma to your cake.
Start sifting the flour and baking powder, gradually integrating them into the wet mixture. Mix gently, with bottom-up movements, so as not to lose the air in the batter. When the mixture is homogeneous, prepare a tray that you line with baking paper. Pour the batter evenly into the tray, being careful not to fill it too much, as the cake will rise while baking.
Now comes the delicious part: placing the strawberries. Place the halved strawberries on top of the batter, ensuring they are evenly distributed to achieve a wonderful taste in every slice. Preheat the oven to 180 degrees Celsius and place the tray inside. Let the cake bake for about 45 minutes. You can check if it is ready using the toothpick method; if it comes out clean, the cake is perfectly baked.
After the cake has cooled, you can dust it with sugar, adding an elegant look and a touch of sweetness. Serve it with a cup of tea or aromatic coffee and enjoy every savory slice! This strawberry cake not only looks wonderful, but its taste will also instantly win you over.
