Lenten Mucenici – A Traditional Delicacy

Lenten mucenici are an excellent choice for those who want to enjoy a delicious and healthy snack without using animal-derived ingredients. Necessary ingredients:
- 500 g wheat flour
- 250 ml lukewarm water
- 100 g sugar (you can also use brown sugar for a more caramelized taste)
- 50 ml oil (sunflower oil is ideal, but you can also opt for olive oil for added flavor)
- 25 g fresh yeast (or 7 g dry yeast)
- 1 teaspoon salt
- 1 teaspoon vanilla essence
- 100 g ground walnuts (or hazelnuts, for a different texture)
- 1 tablespoon cinnamon (optional, for a more intense flavor)

Step-by-step preparation:

1. Activating the yeast: In a small bowl, combine the yeast with 50 ml of lukewarm water and a teaspoon of sugar. Let the mixture sit for 10 minutes until it becomes frothy. This is the sign that the yeast is active and ready to use.

2. Preparing the dough: In a large bowl, add the flour, salt, vanilla essence, and the remaining sugar. Mix the dry ingredients well. Make a well in the center of the flour and pour in the activated yeast, oil, and the remaining lukewarm water. Start mixing with a wooden spoon, then continue with your hands until you obtain a homogeneous and elastic dough.

3. Kneading: Knead the dough on a floured surface for about 10 minutes. The dough should become smooth and elastic. If it is too sticky, you can add a little flour, but be careful not to overdo it!

4. Rising: Shape the dough into a ball and place it in a bowl greased with a little oil. Cover it with a clean towel and let it rise in a warm place for about 1 hour, or until it doubles in volume.

5. Shaping the mucenici: After the dough has risen, divide it into equal pieces (about 100 g each). Roll each piece into a long rope, then braid them into the characteristic shape of mucenici. You can make a knot or an 8 shape.

6. Baking: Place the mucenici on a baking tray lined with parchment paper. Let them rise for another 20 minutes. Preheat the oven to 180°C. Once the mucenici have risen, bake them for 20-25 minutes until golden.

7. Finishing: Once the mucenici are ready, you can sprinkle them with ground walnuts and cinnamon or leave them plain. Serve them warm or at room temperature, alongside a cup of fragrant tea.

Useful tips:
- If you want to achieve fluffier mucenici, you can add a tablespoon of plant-based yogurt to the dough.
- You can experiment with fillings by adding apricot jam or sour cherry preserves in the center of the mucenici before braiding them.
