Diplomat Cake with Berries
To create a delicious and refined dessert, we start with the base of the recipe which involves gelatin, milk, egg yolks, and flour. First, the gelatin is soaked in half a cup of cold water, allowing it to absorb the liquid for about 10 minutes. It will become soft and easy to dissolve in our mixture.
Meanwhile, in a bowl, we combine the milk with the egg yolks and flour. These ingredients are mixed well with a mixer for two minutes until we obtain a homogeneous mixture. After mixing, we place the bowl on medium heat. It is essential to stir constantly with a wooden spoon, being careful not to let it stick to the bottom of the pot. This process will take a few minutes, and when the mixture starts to thicken, we must be careful not to form lumps. When the cream has thickened enough, we take it off the heat and add the soaked gelatin, stirring vigorously to ensure it dissolves completely. We let the cream cool, stirring occasionally to prevent a crust from forming.
While the cream cools, we take care of the whipped cream. We beat the cream until it becomes firm, then carefully fold it into the cooled cream, stirring gently to retain the air in the whipped cream. This will give a light and fluffy texture to our dessert. After obtaining a smooth cream, we turn our attention to the fruits we have available. If we use frozen fruits, we let them thaw at room temperature and drain them well.
To add a splash of flavor, we can use the juice obtained from the fruits to soak the cake layer. We put the juice on the heat together with three tablespoons of sugar, stirring until the sugar completely dissolves. Now we are ready for assembly. We take a cake layer and lightly soak it with the fruit syrup, add all the cream, and then cover with the second layer, which we also soak.
After the cake is assembled, we let it chill until the next day to firm up and combine the flavors. The next day, we remove the cake from the cake ring and let our imagination fly regarding decoration. Personally, I chose to decorate the cake with whipped cream and buttercream roses, but you can use any type of decoration you prefer, such as fresh fruits, grated chocolate, or even caramelized nuts. This is a recipe that not only impresses with its appearance but also with its refined taste, making it perfect for any special occasion.
