Start by draining the sour cherries well, ensuring that no excess liquid remains to avoid excess moisture in the dough. These delicious fruits will add an intense flavor and an unmistakable aroma to our dish. In a larger bowl, mix the dry and wet ingredients with a wooden spoon. Add the sifted flour, creamy yogurt, granulated sugar, vanilla sugar, baking soda quenched with a few drops of lemon juice, salt, the whole egg, sunflower oil, and melted but cooled butter. Mix well until the dough becomes homogeneous and binds.

Once you have obtained an oily dough, knead it for a few minutes on the work surface until it becomes elastic and uniform. Shape it into a ball, wrap it in cling film to prevent drying out, and let it chill in the refrigerator for 30 minutes. This step is essential as it will help relax the gluten in the dough, making it easier to roll out.

After the dough has rested, take it out and place it on a floured work surface. Sprinkle a handful of flour on top and use a well-floured rolling pin to roll out the dough into a thick sheet of about 1 cm. This consistent layer will ensure a pleasant texture for the final product. Using a knife or spatula, cut the dough into suitable squares.

To add a splash of flavor, sprinkle chocolate chips or grated chocolate over the surface of the squares, then gently roll over them with the rolling pin to partially incorporate them into the dough. Place 4 sour cherries in the corners of each square, then cover them with dough, folding the corners towards the center and pressing lightly to seal them. This will create a small 'pouch' filled with cherries that will caramelize beautifully in the oven.

In the center of each finished shape, place a cherry for an attractive look. Carefully arrange them on a baking tray lined with parchment paper, leaving a little space between them to allow for expansion during baking. Preheat the oven to 180 degrees Celsius and bake for 15-20 minutes or until they turn golden and appetizing.
