Cherry and Almond Puff Pastry
To prepare a delicious cherry dessert, start by thawing the dough, ensuring that it becomes soft and easy to handle. Then, take the cherries and drain them to remove excess liquid, which will prevent a watery filling. In a small bowl, dissolve the cornstarch in a few tablespoons of the cherry compote. Once completely dissolved, add the mixture to about 120 ml of the boiling compote juice along with sugar. Stir continuously and let the mixture boil for a few minutes until it thickens well. Once it reaches the desired consistency, remove the pot from the heat and carefully fold in the drained cherries cut into smaller pieces. Allow the filling to cool completely before using it.
Meanwhile, preheat the oven to 200 degrees Celsius, so it’s ready to bake your delicious pastries. Take the puff pastry and cut it into rectangular pieces, suitable for filling each roll with the cherry filling. On each piece of dough, distribute a portion of the cherry filling, making sure to place it along the longer side. Carefully roll the dough lengthwise, ensuring that the filling stays well wrapped. To prevent it from opening during baking, seal the ends tightly and place the rolls on a baking tray lined with parchment paper.
