Carrot and Grated Coconut Cake (microwave)
To achieve a perfect cake in the oven, it is important to have all the ingredients prepared and to follow the steps carefully. We start with the basic ingredients: 200 g of flour, 150 g of sugar, 3 eggs, 100 ml of milk or water, 1 packet of baking powder (it is ideal to use microwave baking powder, but regular baking powder works too). We can also add flavors like vanilla or lemon zest to enhance the taste.
The first step is to preheat the oven to 180 degrees Celsius. In a large bowl, combine the eggs with the sugar, whisking vigorously until the mixture becomes frothy and light in color. This is the moment to add the flavors, so feel free to use vanilla essence or lemon zest.
Next, gradually incorporate the milk or water, stirring continuously to avoid lumps. Once the liquid is well integrated, we start adding the sifted flour along with the baking powder, mixing with a spatula or whisk until you obtain a smooth and fairly runny batter. The consistency is essential, so adjust the amount of liquid if necessary.
After the batter is ready, pour it into a baking tray lined with parchment paper or greased with butter. The preheated oven will help with even baking, but it is important not to leave the cake in for too long. Bake for 5 minutes, then check the state of the cake. Repeat cycles of 5 minutes followed by 3 minutes, alternating between microwave and grill functions, until the cake is well baked. An effective method is to test with a toothpick: if it comes out clean, the cake is ready.
In total, about 13 minutes should be enough to achieve a fluffy cake, but it is essential to monitor the baking time carefully, as each oven is different. If you notice that the cake is becoming too brown, cover it with aluminum foil to prevent burning. Finally, let the cake cool slightly before cutting and serving it. It can be enjoyed plain or with a drizzle of jam, whipped cream, or ice cream, offering loved ones a true delicacy.
