Cake with Cheese, Sour Cherries and Cherries
Carefully separate the yolks from the egg whites, making sure no yolk remains in the whites, as this would prevent the formation of a firm foam. In a clean, dry bowl, beat the egg whites with a pinch of salt using an electric mixer. It is important to beat them until they become a stiff, shiny foam that holds its shape. Meanwhile, in another bowl, beat the yolks together with the 10 tablespoons of sugar, adding them one at a time. The mixing process should continue until the mixture becomes homogeneous and creamy, with a light shade. Then, add the 5 tablespoons of boiled water, mixing constantly, followed by the 5 tablespoons of oil. Mix everything until well incorporated.
Once a fine mixture is obtained, add the packet of vanilla sugar, and then gradually the 10 tablespoons of flour, along with the packet of baking powder. The mixture is done with a spatula or a wooden spoon, being careful not to deflate the egg whites. Once everything is well combined, pour the mixture into a greased pan with margarine or butter and dusted with a little flour to prevent sticking.
Preheat the oven to 180 degrees Celsius and place the pan inside, allowing the base to bake for about 30 minutes, or until a toothpick inserted in the middle comes out clean. While the base is baking, prepare the filling. In another bowl, thoroughly mash the cottage cheese, adding the pitted sour cherries and cherries. The sweetness of the filling can be adjusted by adding sugar to taste, then add the egg and a pinch of cinnamon, mixing everything until a uniform mixture is obtained.
After the base has been baked and cooled, carefully cut it into two equal parts. Place the first part on a tray and generously soak it with the juice from the sour cherry compote, so that it becomes moist and aromatic. Spread the cheese mixture over this base, and then gently place the other part of the base on top, which is also soaked to add extra flavor.
Although it can be decorated with whipped cream, chocolate, or fruits, I choose to serve it plain to savor the authentic taste of cheese with sour cherries and cherries. Slice it, serve it with gusto, and it is perfect for any occasion, bringing a touch of joy in every bite.
