To create a sweet and aromatic delight, we start by preparing the necessary ingredients. In a large bowl, we pour in the fresh milk, which should be at room temperature, and add the baking soda. This mixture will react immediately, helping to achieve a fluffy texture for our cake. We let it sit for about two minutes, during which the baking soda will start to take effect.

After the two minutes, we add the remaining ingredients: sugar, eggs, oil, and vanilla essence. We mix with a whisk or with the mixer on low speed until the mixture becomes homogeneous and fluffy, a process that takes between one and two minutes. It is important not to overmix, as this could develop the gluten in the flour, which may lead to a denser cake.

We prepare a small baking tray, greasing it with oil and dusting it with flour, ensuring it is well covered to prevent sticking. We pour half of the obtained mixture into the tray, making sure it is evenly distributed. Then, we add some sour cherries, which will add a tart flavor and a vibrant color to the cake.

Next, we take the other half of the mixture and add the cocoa, mixing well until it is completely integrated, providing a pleasant contrast with the light-colored batter. We carefully pour this cocoa mixture over the cherries in our tray, trying not to disturb the layer of fruit.

To finish the preparation, we add the rest of the cherries on top, which will form a delicious topping. They will bake and release their juice during the baking process, enriching the overall flavor of the cake. We preheat the oven to 180 degrees Celsius and bake the cake for about 30-35 minutes or until a toothpick inserted in the middle comes out clean. After the cake is ready, we let it cool in the tray for a few minutes, then transfer it to a rack to cool completely.
