Crescent roll pudding with cottage cheese and fruit

Dessert - Crescent roll pudding with cottage cheese and fruit by Celia H. - Recipia

The crescent roll pudding with cottage cheese and fruit needs the rolls to soak up the milk well, then bakes for about 45 minutes. With cottage cheese, sour cream and fruit, the middle stays soft while the top browns. I only cut it once it has cooled completely. Preparation: 20 minutes. Cooking: 45 minutes. Resting: 60 minutes. Total time: 125 minutes. Serves: 8. About 430 kcal and 15 g protein per serving.

Ingredients

  • 6 plain crescent rolls
  • 500 ml milk
  • 2 packets vanilla sugar
  • 10 g butter
  • 4 eggs
  • 10 tablespoons sugar
  • 300 g cottage cheese
  • 250 g sour cream
  • 1 lemon
  • 250 g cherries and strawberries
  • 1 tablespoon powdered sugar

Preparation

1. Tear the 6 crescent rolls into pieces. Mix the milk with the vanilla sugar and pour it over them. 2. Grease an ovenproof dish with butter and put the soaked rolls in it. 3. Beat the eggs with the sugar. Stir in the cottage cheese, sour cream and grated lemon zest, then pour the mixture over the rolls. 4. Run a fork through the mixture to combine it evenly. Arrange the fruit on top. 5. Bake the pudding at 180°C for about 45 minutes, until browned on top and set in the middle. 6. Leave it to cool for at least 60 minutes. Serve cold, dusted with powdered sugar.

Notes

A slice goes well with unsweetened tea. Plain crescent rolls, without filling, soak up the milk evenly; filled ones change the texture. Alex's school rolls sometimes end up in my freezer, and I dry out others for Fufu. If they've been frozen, let them thaw completely before tearing them up. You can use frozen fruit, but drain it after thawing, since the extra juice can leave the middle too wet. The pudding may still look soft in the center when you take it out; cooling helps it set. You can bake it a day ahead and keep it covered in the refrigerator for up to 3 days. You can replace the cherries and strawberries with raspberries or blueberries. The pudding contains gluten, dairy and eggs.

Frequently asked questions

How big should the pieces of crescent roll be?

Tear them into pieces about 3-4 cm across, so they soak up the milk without turning into mush.

What should I do if the cottage cheese is very wet?

Leave it to drain in a sieve for 20 minutes before mixing it with the eggs and sour cream.

How can I tell when the pudding is baked?

The edges should be browned, and there should be no liquid sheen on top. If the center still sloshes when you gently shake the dish, bake it for 5 more minutes.
