Blueberry Cake
Preheat the oven to 180 degrees Celsius, ensuring the temperature is even so that the cake bakes uniformly. We start by preparing a mixing bowl, into which we will add room temperature butter. The butter should be soft but not melted, to help us achieve a fluffy texture. We begin mixing the butter, gradually adding sugar, preferably granulated sugar, until the mixture becomes a fluffy, light-colored paste. This process will take about 3-5 minutes.
Once we have achieved a fluffy consistency, we add the eggs, one at a time, ensuring that each egg is fully incorporated before adding the next. After the three eggs, we start adding the yogurt, a little at a time, continuing to mix until all the wet ingredients are well combined. The yogurt will give the cake a pleasant flavor and a moist texture.
In another bowl, we mix the flour with the baking powder and vanilla sugar. It is important to sift the dry ingredients to avoid lumps. Once the flour mixture is homogeneous, we begin to gradually incorporate it into the butter and egg mixture. We also add a pinch of salt, which will enhance the flavors and balance the sweetness of the cake.
After we have obtained a homogeneous dough, we grease and flour two pans, ensuring they are well covered to prevent sticking. We pour a quarter of the dough into each pan, then sprinkle fresh blueberries on top. Next, we cover the blueberries with another layer of dough, leaving a little space to allow the cake to rise. Finally, we sprinkle blueberries on top of the cake for an attractive appearance and intense flavor.
We place the cakes in the preheated oven and bake for about 30-35 minutes or until golden brown. It is important to check the cake with a toothpick; if it comes out clean, the cake is baked. After taking them out of the oven, we let the cakes cool slightly before cutting and serving.
